RAW VEGAN PECAN PIE
Pie Shell 3 1/2 cups pecans 6 dates pinch of salt Filling 3 cups large pitted dates, soaked for 30 minutes in hot water about 1 cup pecans In a food processor combine the ingredients for the crust. Blend until the pieces are broken down and stick together when pressed. Spoon evenly into pie plate and chill in freezer. Place the soaked dates in a food processor. . Add about 3-4 tbsp soak water and blend until smooth and gooey, scraping down the sides often. Spoon filling into chilled crust and top with pecans. Place in refrigerator and allow to set up for at least 1 hour.
